Stuffed Zucchini with Stewed Tomatoes

  1. Cut a zucchini in 1/2 long ways, scoop out the seeds
  2. Coat the zucchini with olive oil, basil and garlic
  3. In a separate bowl combine ground beef, garlic, pepper,onions, and red peppers chopped up small.
  4. Fill the zucchini with the stuffing mixture
  5. Bake in the oven at 350 for 30 minutes or longer if you like your meat well done.
Stewed tomatoes
  1. Mix the three together and warm over low heat.
  2. Serve the stuffed zucchini with stewed tomatoes.
