Stuffed Zucchini with Stewed Tomatoes

- zucchini
- olive oil
- basil
- garlic minced
- ground beef
- peppers
- onions
- Cut a zucchini in 1/2 long ways, scoop out the seeds
- Coat the zucchini with olive oil, basil and garlic
- In a separate bowl combine ground beef, garlic, pepper,onions, and red peppers chopped up small.
- Fill the zucchini with the stuffing mixture
- Bake in the oven at 350 for 30 minutes or longer if you like your meat well done.
Stewed tomatoes
- stewed tomatoes
- minced garlic
- fresh basil
- Mix the three together and warm over low heat.
- Serve the stuffed zucchini with stewed tomatoes.
