Meatballs with Marinera & Spaghetti (squash)

Spaghetti Squash

  1. Cut spaghetti squash in half and remove all seeds.
  2. Rub a mixture of olive oil, garlic and fresh basil and sea salt on the squash.
  3. Turn the squash face down on a baking tray covered with foil and bake for 1 hour at 350.
  4. Let the squash cool for a bit and begin to scrap the squash out.
  5. If the squash is cool enough when you scrape it out it will come out just like spaghetti!

Turkey and Beef Meatballs

  1. Mix turkey and ground beef together in a mixing bowl with one egg, basil, and oregano.
  2. Form meatballs and saute in a pan with olive oil just till they are brown or as cooked as you like your meat.

Marinera Sauce

  1. Mix the three tomato products together in a pan.
  2. Add oregano, garlic, basil and olive oil with 2 cups water.
  3. Cook meatballs in this sauce mixture for 3-4 hours.

Put your spaghetti squash on a service dish, cover with your sauce and add the meatballs all around the squash. Add some fresh basil to the top!

This replaces pasta, is very low in carbs, and still gives you the taste of Italy that I so miss on this diet. I grow my own basil and oregano all year so I always have some on hand for seasoning.
