Scallion Chive Soup

- 1/2 c zucchini, shredded
- 1/2 c shallots, chopped
- 1 clove garlic, minced
- 3 t olive oil
- 1 c scallions, chopped
- 1/2 c chives, chopped
- 2 c chicken broth
- 1/2 c water
- In saucepan, cook zucchini, shallots, and garlic in oil over moderately low heat.
- Stir occasionally until shallots are tender (about 5 min.).
- Add scallions and all but 2 T chives.
- Cook, stirring, until scallions are softened, about 2 min.
- Stir in broth and water.
- Simmer 2 min.
- In a blender, puree mixture.
- Pour soup through a fine sieve into clean pan, pressing hard on solids and discarding them.
- Heat soup over moderate heat, stirring until hot.
- Season to taste.
- Stir in remaining chives.
