Scallion Chive Soup

  1. In saucepan, cook zucchini, shallots, and garlic in oil over moderately low heat.
  2. Stir occasionally until shallots are tender (about 5 min.).
  3. Add scallions and all but 2 T chives.
  4. Cook, stirring, until scallions are softened, about 2 min.
  5. Stir in broth and water.
  6. Simmer 2 min.
  7. In a blender, puree mixture.
  8. Pour soup through a fine sieve into clean pan, pressing hard on solids and discarding them.
  9. Heat soup over moderate heat, stirring until hot.
  10. Season to taste.
  11. Stir in remaining chives.
