Zucchini or Cauliflower Pancakes
- 1 zucchini, grated
- 1 free range egg
- 1 onion (small) finely chopped
- 1 clove of garlic, minced
- 1 Tb of fresh dill, minced
- Sea salt to taste
- Mix ingredients together and fry in coconut oil over medium heat.
Cauliflower Variation: Replace grated Zucchini with 1 cup mashed/steamed cauliflower (should be cooked until soft)
