Zucchini Milk

From: Pat Lane

  1. Wash and cut off ends of large overgrown zucchini.
  2. Peel if the green color is a problem.
  3. Cut into manageable chunks, about 1" cubes.
  4. Fill the blender jar or food processor about half full.
  5. Set on whatever setting doesn't burn up your motor, until a liquid consistency.
  6. Peeled zucchini gets to this point sooner.

Zucchini milk can be used as is for substituting for heavy cream or condensed milk, or diluted with water for replacing other milks.
