Roasted Veggies

Your choice of any of the following or a combination:

  1. Preheat oven to 400-425
  2. Clean/chop/trim into bite sizes the vegetables.
  3. Toss veggies in olive oil with some sea salt & freshly ground pepper
  4. Arrange in single layer on a shallow roasting pan, jelly roll pan, or in a cast iron skillet.
  5. Bake uncovered 20-50 minutes, depending on veggies, turning/tossing occasionally until done as you like
