Creamy Cauliflower Soup

  1. Chop up everything and throw into a pot of boiling water (a few cups), bring to a boil, lower heat and let simmer for 20 minutes.
  2. Take out and puree in a blender (probably wont be able to blend it all at once).
  3. I served ours with a celery stalk as garnish and nutmeg on top to give it some color.
  4. If you want it chunkier, only puree half and then add it back in.

I like the idea of soups because all of the nutrients that might run off into juices that you don't normally eat (get left in the pot) are kept with the soup. Plus, it's a great way to get the fiber without all of the chewing. With cooking, you do lose some nutrients due to the heat, but you're probably eating more than if you just ate the raw vegetables.
