Fish or Scallops

- Fish-Orange Roughy, Tliapia or Sea Scallops
- Olive Oil
- Butter or ghee
- 1 Lemon
- Sea salt & Cracked Pepper
- Lemon Pepper seasoning
Directions:
- Combine olive oil & butter/ghee, enough to coat bottom of pan
- Add fish or scallops & seasonings
- Roll & cut lemon, squeeze one half onto fish/scallops.
- Cook on low heat to medium heat, turning after approximately 5 minutes.
- After 5 minutes on each side, turn down heat until liquid starts to evaporate & thicken.
- This only takes a few more minutes. Serve with the rest of the lemon sliced.
Comments:
You can also add in veggies with this, asparagus, spinach or any other kind of greens, or some shredded zucchini added during the last couple of minutes would be very tast. Maybe a few julienned carrots for color or some red onions. Easy but very tasty if you like seafood.
