Sarah's Garlic and Lemon Roasted Chicken

Ingredients:

Preparation:

  1. Preheat oven to 500 degrees Fahrenheit.
  2. Thoroughly wash chicken and pat dry.
  3. Rub the outside of the chicken with olive oil and one slightly crushed clove of garlic.
  4. Place onion, lemon, and garlic inside the chicken. Season chicken inside and out with sea salt and freshly ground black pepper.
  5. Place the chicken breast-side down on a roasting rack or parchment-lined baking sheet. Bake chicken in the preheated oven for 20 minutes, and then turn the oven down to 300 degrees Fahrenheit. Continue roasting the chicken until the internal temperature at the thickest part of the thigh reaches 165 degrees Fahrenheit, approximately 1 hour.
  6. Remove chicken from oven and allow to rest at least 15 minutes before carving. Don't forget to freeze the carcass for stock!
