Crispy Jerk Chicken Wings

Preparation:

  1. Preheat oven to 500 degrees Fahrenheit.
  2. In a small bowl, thoroughly combine stevia, coriander, ginger, garlic powder, onion powder, sea salt, cayenne pepper, thyme, black pepper, allspice, cloves, and cinnamon. Place spice rub into an air-tight container so that the seasoning not used in this recipe can be used later.
  3. Thoroughly rinse chicken wings, remove the wing tips, and cut each wing into two segments, snipping it at the joint. Pat the wings dry with paper towels, and place them in a large bowl.
  4. Toss wings with 3T jerk rub until no seasoning remains in the bowl.
  5. Arrange wings on a large, parchment-lined baking sheet, skin side up, and bake in the preheated oven for 25 minutes. Allow to rest 5 minutes before serving.
